Our field research made us realize how stores are purposefully designed to promote certain goods over others. What especially came to our attention was the amount of non-local and non-seasonal groceries being on display, while local and seasonal alternatives were hidden away in lower baskets.

To assess the impact of store layouts, we conducted A/B tests with a prototyped setup. Participants shopped from a list while identifying non-local and non-seasonal products. We measured speed, accuracy, and feedback to evaluate effectiveness.

Findings

Customers are more likely to buy local and seasonal products when they are prominently displayed and clearly highlighted. Color-coded labels and transparent store layouts significantly improved recognition speed and decision-making, reducing reliance on familiar, often non-local options and labels. Simple design elements, such as icons and structured signage, increased trust and engagement while minimizing decision fatigue. This approach not only encourages sustainable shopping habits but also strengthens connections to local producers, supporting a more conscious and regionally driven consumer experience.
